The Vegetarian's Complete Quinoa Cookbook

Many of you already know and love Mairlyn Smith.  If you don't, you can find out all about her  HERE.  I was lucky enough to get a review copy of her first cookbook Healthy Starts Here: , and which I wrote about and still love to death...um... make that to good health.

Naturally when I heard that she had a new cookbook out... in this one she edits an awesome collection of quinoa recipes from the Ontario Home Economics Association.   Now hold on...
those of you who a) don't know the word... it's pronounced keen-wah or b) have no idea what it even is, let alone how to cook it... suffice to say, it looks like a grain and cooks like a grain but is actually a seed.   Have no fear, the book explains it all and shares fantastic vegetarian dishes (yes, even carnivores like me, love to add healthier choices to our meals) from breakfast, to dinner; quick breads to soups, salads, sides, mains,cakes and desserts, everyone will love the recipes.

The Vegetarian's Complete Quinoa Cookbook is a masterful collection.  The photos are stunning, tutorials, most helpful and the variety of dishes astounding.  
As soon as I opened my copy, I rushed to make this Hearty Kale, Quinoa & Lentil Soup which turned out to be a fantastic lunch and .... if there's any left by tomorrow... great for freezing in individual portions.  Unfortunately I ran out of time to make the blueberry muffins... perhaps tomorrow.

The Black Bean Bake with Feta Crumble has me drooling for a main course, not to mention the delicious looking Slow cooker Vegetarian Lasagna, Chipotle Chili.  Or the sides like Spicy Vegetable Biryani or Toasted Quinoa & Mushroom Pilaf....or the homemade Spinach Roti.

Some of the baked goods, like the savory cornmeal muffins, the crepes, breads and things like chocolate black bean brownies, that have me drooling, need quinoa flour.   It's high up on my shopping list now.

Bottom line:  If you're looking for interesting, easy to prepare, healthy additions to your diet... whether you're a vegetarian or not, this is a terrific book to add to your collection.
