One of the secrets to gourmet food at the campsite is to marinate or at least prepare the marinades before you leave home. That way you don't have to worry about lugging around bottles and jars of all those ingredients that turn "food" into gourmet delights that have everyone applauding your skills. I may have made this Marinated Skirt Steak in my own kitchen and grilled it on my balcony, but the effect was the same... a giant WOW!
Being a carnivore, I naturally gravitate to the meat section of any cookbook first, but that doesn't mean I don't appreciate other delicious recipes. Campfire Cuisine has great recipes like skillet scones, cheesy biscuits, and pancakes all starting with a prepared baking mix of 2 cups of flour, 2 tsp baking powder, 1 tsp baking soda, 1 tsp salt, 1 tsp sugar. Easy enough to whip up at home, put in zip lock baggies and pop in your supply basket. If pancakes are too boring, how about Bananas Foster French Toast or Sausage & Polenta Scramble?
Snacks, lunch, dessert... all have some really inspired and easy recipes to whip up. But I admit, the marinades, dressings and rubs are my favorite sections of the book... especially since I probably won't be going camping. My daughters, on the other hand will be fighting for the copy for all the right reasons... even when they stay home.
BOTTOM LINE: Whether you're like me... not a camper, or like my girls who are, this is a fantastic book to help you easily become the cooking star anywhere.
